5 Favorite Things February 2022

Sharing what I am loving right now...

February flew by in a whirlwind of home renovations, pipe leaks which caused more renovations, soccer games, school projects, Valentine's Day fun and a whole lot of content creation and health-focused fitness. I found myself journaling a lot about creative projects and ideas that have been brewing inside me for quite some time. For me, winter is a time of reflection and self care. I am finding more joy in the day to day of life and motherhood and my wellness journey and just trying to take it day by day.



1. Things I am loving, excited about and buying right now!


Kopari Deodorant is my favorite because it goes on smooth, doesn't leave white marks and has a fresh scent.


I am loving MONGO KISS by EcoLips lip balm right now! It moisturizes the lips and works great under lip gloss or lip stick! I love the organic and natural ingredients and the Strawberry Lavender is my favorite flavor. I always have one in my purse and at my desk so when I am working I can reapply and keep my lips soft.


Lululemon Align Sports Bra. I have loved Lululemon clothes for a long time. I used to work at the store in San Francisco and was actually in charge of finding teachers and fitness experts to be ambassadors with the brand. It was a super fun job. I love the quality and this bra top is comfortable and very flattering for all shapes.


I completed a new 4 week home fitness program called Job 1 and I LOVED the 20 minute workouts and the trainer Jennifer Jacobs.




Bag Blam Daily hand Moisturizer. I love hand cream that leaves your hands soft but not greasy! I picked the up at TJMaxx and fell in love with it. It doesn't have any fragrance and it is perfect size for your purse, carry-on or backpack!




Energize Pre-Workout travel sticks in Lemon flavor! These stick packs are perfect for your gym or yoga bag, the car and travel! I love the lemon flavor and the natural vegan ingredients not only give you an energy boost pre workout or for an afternoon pick me up on the go! All you do is mix one packet with 8-10oz of water so they are perfect for anywhere and everywhere!



Herbaly Tea is one of my new favorite daily wellness rituals. I love that it is organic and beautifully packaged. You will love this simple yet luxurious addition to your morning, afternoon or evening wellness routine.


I can't leave out dessert! I am a firm believer that dessert and treats should be included in any good nutrition plan! And right now, I am absolutely LOVING HU Kitchen Chocolate bars! If you are a chocolate lover, you will love these bars. I have seen them at Sprouts, Whole Foods and Jimbos here in San Diego. I have had the Almond Crunch, Cashew Butter and the Simple Dark Chocolate. They are vegan and delicious and the back story behind the family owned company is super cool.


2. Favorite Places I am visiting....


The boys and I drove up the California coast and visited my parents who have a beach house on the central coast of California. It is so beautiful and relaxing and Highway 1 has some of the most beautiful views of the Pacific Ocean.



We spent the day exploring Morro Bay watching the sea otters, birds and wildlife. We went shopping at Wavelengths and I picked up this adorable Cabana Rugby stripped tote. OBSESSED. It is so perfect for Spring and Summer!


We spent a lot of time in Cambria birdwatching, hiking and walking along the boardwalk at Moonstone Beach. We ate dinner at Robyn's which has the best food in town! We also visited the Elephant Seals at Rock Point.


I got this amazing Kale Salad and the fried Brussel sprouts for dinner and they were AMAZING! Robyn's Restaurant is where we had my rehearsal dinner for my Cambria Beach wedding 10 years ago. It has the BEST food in town and the most beautiful outdoor dining garden. Highly recommend it!


MEXICO, I LOVE YOU...

If you can, you must stay at the UNICO Hotel in the Mexican Riviera. I have been two times and it is one of my most favorite hotels in the world. It is an all-inclusive, adults only resort featuring beach front property, beautiful pools, a spa, amazing restaurants, amazing staff, aqua fitness classes, a gym and gorgeous grounds. The rooms are luxurious and you feel like you are somewhere magical. It is very romantic and relaxing.


3. Favorite San Diego Must-Do's

We had a few warm beautiful days this month and so we went kayaking in Mission Bay. It is something everyone should experience at least once in their life! The water is beautiful and calm and the bay is huge so you can paddle out and find a sense of calm. San Diego weather is beautiful most of the year which is one of the reasons why we love living here (and why it's so expensive) but I especially love it in the Spring and Summer months when the sun is at its warmest! If you are planning to visit, definitely think about kayaking in Mission Bay!

Had lunch on the most beautiful rooftop vegan restaurant in San Diego called Trilogy. It is one of my favorite restaurants. I have pretty much had everything on the menu but the Sunset Tacos are a favorite! They have a new cookbook that you can get so you can make their recipes at home! LOVE IT!


4. What I am watching and reading and loving!



Choose Your Story, Change Your Life by Kindra Hall. This book was fabulous and really helps you identify any negative self talk and story telling you are stuck in and helps you re write it so you can live your best life!



State Change by Robin Berzin, MD. LOVED THIS BOOK! I loves that she outlines what to do to avoid burnout and


Inventing Anna on Netflix. Based on a true story about a con-artist who presents herself as a German heiress in order to climb the socialite ranks in NYC and start her own business. I totally got sucked in and binge watched this show in just a week! I LOVED IT! The acting was phenomenal and the production, direction and story telling were amazing. You will love it.


Down to Earth with Zac Efron on Netflix. I love Zac Efron and if you love travel and learning about other cultures and countries and how we can take better care of the earth, this is a MUST SEE documentary! I just watched it for the second time.


5. Favorite Recipes of the Week



Chocolate Oatmeal Energy Bites

1 1/4 cups dry rolled oats

1/2 cup peanut butter

1/3 cup pure maple syrup

3 TBSP dried goji berries

3 TBSP mini chocolate chips (we love @enjoylifefoods vegan minis)

3 TBSP chopped raw almonds

1 TBSP ground flaxseeds

1 TBSP chia seeds

1/2 tsp pure vanilla

1/4 tsp sea salt

Combine ingredients in a bowl, mix well and place in fridge for 30 minutes. Roll mixture into balls and store in an air tight container in the fridge for up to 2 weeks!

These energy bites make a great snack to have before or after a workout or as an afternoon snack and my kids love them as a healthy treat in their lunch! Enjoy!







Cashew Veggie Buddha Bowl

Ingredients:

Coconut oil

Coconut Aminos

Broccolini

Kale

Spinach

Brussel Sprouts

Avocado

Cashews

Black Rice - I used organic @lundbergfarms black pearl rice

Kimchi - I used @pickledplanet Beat Kraut


Instructions:

1️⃣ Start cooking the rice. We like to use the Instant Pot!

2️⃣ Soak Cashews in Coconut Aminos for 10 minutes & preheat oven to 400. Then toast for 5 minutes.

3️⃣ Heat coconut oil in pan and then sauté broccolini and kale until soft. Add a splash of coconut aminos and then add spinach and cook until wilted.

4️⃣ Add rice and cooked veggies to your bowl and top with diced avocado and cashews and kimchi.

5️⃣ ENJOY!




No Bake Fudge Brownies


Don’t let the avocado in the frosting fool you, the frosting is out of this world amazing!!

Ingredients:

💕Chocolate Frosting💕

1/2 ripe avocado

1/4 cup raw cacao powder

1/4 cup maple syrup


💕Brownie💕
2 cups walnuts

1/2 cup medjool dares 
1/4 cup raw cacao powder

Pinch of salt (optional) 


Instructions:


Make the frosting first! Add all ingredients to a food processor and process until smooth. Scoop out frosting and set aside.


Add all raw brownie ingredients to food processor and process until mixed well. Take brownie mixture and press firmly and evenly into a pan. Spread frosting on top and put in the fridge to set for at least an hour. Slice into 8 equal brownies and serve.💕 Enjoy!
